  • 500g pack of minced lamb, or ask your butcher for minced lamb shoulder
  • 1 ½ tbsp olive oil
  • 1 onion, chopped
  • 1 tsp cumin seeds
  • 4 cloves of garlic, grated
  • 500 ml lamb broth
  • 75g manzanilla olives, pitted and sliced
  • Zest 1 lemon
  • 1 green chili, sliced
  • 1 tbsp chopped mint
  • 3 large zucchini, halved lengthwise and deseeded
  • 150g goat cheese



Coming from the same family as squash and melon, zucchini should be firm and have a dark green, blemish-free skin. Look for round and light green varieties at farmers markets.

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Put the minced meat in a pan with 1 tablespoon of oil. Roast over high heat until the lamb is dark and crispy, about 14 minutes.
  3. Drain the lamb in a colander.
  4. Place the pan back on the heat, add the remaining oil and onion and fry until golden brown.
  5. Add the cumin and garlic to the pan and fry for 1 minute.
  6. Return the lamb to the pan along with the broth. Let simmer for 20 minutes.
  7. Add olives, lemon zest, chili, mint and season to taste. Simmer for another 5 minutes.
  8. Sprinkle the zucchini with 1 tablespoon of sea salt flakes and let them rest in a sieve for 15 minutes.
  9. Rinse the zucchini under cold water and pat dry with kitchen paper.
  10. Place the zucchini in an ovenproof dish.
  11. Fill the zucchini halves with the lamb mixture.
  12. Sprinkle the goat cheese over the stuffed zucchini.
  13. Bake in the oven for 20-25 minutes until the cheese is golden brown.
