  • 1 orange, halved
  • 1 egg
  • 75g butter, melted
  • 300g self-raising flour
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • 100g golden powdered sugar
  • a handful of sultanas
  • Mix 1 cup of soft cheese with 3 tablespoons of powdered sugar to form a glaze

Tip

Baking with zucchini
Zucchini can retain quite a bit of water, which can affect the finished consistency of your cake. If your grated zucchini seems watery, place them in a clean cloth and wring out some of the liquid in a bowl. Then add the zucchini to the mixture as usual. The timing of making zucchini cakes may depend on the water content of your zucchini. If necessary, put the muffins in the oven for another 10 minutes. Just test it with a skewer and make sure it comes out clean.

Preparation steps

  1. Brush the muffin tin with oil. Ask your adult helper to change the oven to 190°C/170°C fan/gas 5.
  2. Grate the zucchini and place in a large bowl.
  3. Grate the apple and add it to the bowl.
  4. Squeeze the orange and add the juice to the bowl.
  5. Beat the egg into a bowl. If any shell residue gets in, scoop it out with a spoon.
  6. Stir butter and egg into the zucchini and apple mixture.
  7. Sift flour, baking powder and cinnamon into the bowl.
  8. Add sugar and sultanas.
  9. Mix with a spoon until well combined, but don’t worry if it gets lumpy.
  10. Pour the mixture into the mold.
  11. Ask your helper to put it in the oven and cook for 20-25 minutes.
  12. Allow to cool in the mold and then spread some icing on each one.
