Ingredients

  • 2 round flatbreads
  • 2 tbsp olive oil
  • 1 tbsp za’atar spice mix (see tip)

Za’atar

Here, Za’atar is the name for the Middle Eastern spice blend that consists of a heady combination of herbs, spices and seeds; however, it is also the name of an herb itself. As with so many Middle Eastern dishes, there are many regional variations.

Preparation steps

  1. Preheat the oven to 110°C/90°C fan/gas 1/4.
  2. Place the pittas on top of each other on a cutting board.
  3. Quarter with a bread knife.
  4. Then cut each quarter in half again (so that you end up with 16 equally sized triangles).
  5. Place the olive oil, a pinch of salt and the za’atar in a small bowl.
  6. Stir the ingredients together to blend.
  7. Using a pastry brush or your finger, brush the pittas on both sides with the mixture.
  8. Place the coated pittas on a baking sheet.
  9. Bake in the oven for 30-40 minutes until crispy.
