  • 140g plain flour
  • a pinch of baking powder
  • 85g salted butter
  • 1 tsp powdered sugar
  • 1.2 liters full-fat Jersey milk
  • Juice 1 lemon
  • 50g unsalted butter
  • 50g powdered sugar
  • 1 large chicken or duck egg, beaten
  • 25g currants

Preparation steps

Yorkshire curd tart recipe

  1. Prepare the quark the evening before:
    1. Heat the milk in a large pot.
    2. Once it is gently simmering, add the lemon juice.
    3. Turn the heat to low and stir gently as the curds form.
    4. Don’t stir too quickly, otherwise the curd will fall apart.
    5. Once the mixture resembles a watery liquid with creamy lumps, remove the pan from the heat and allow the curds to cool in the whey.
    6. Drain the curds overnight using a clean tea towel, reserving the whey like buttermilk for making scones.
  • Preparation of the pastry:
    1. Mix the flour, baking powder, butter, sugar and a pinch of salt in a food processor until the butter is almost completely combined – leaving a few small lumps of butter to loosen the dough.
    2. Pour the dry mix onto a work surface and make a well in the center.
    3. Add a little cold water until you get a smooth but not sticky dough.
    4. As soon as the mixture comes together, knead it very lightly, wrap it in cling film and chill for at least 20 minutes.
    5. Can be prepared and refrigerated up to 2 days in advance.
  • To finish the filling:
    1. Beat butter and sugar until soft.
    2. Add the egg little by little.
    3. Add the curds to the mixture and whisk gently to break up any large lumps.
    4. After pureeing, add the currants.
  • Preheat the oven to 180°C/160°C fan/gas 4.
  • Roll out the dough to line a greased flat cake tin or 20cm diameter tart tin.
  • Distribute over the curd mixture.
  • Bake for 35-40 minutes until the dough is browned and cooked through.
  • Allow to cool, then cut into slices and serve plain or with a splash of cream.
