Preparation steps

Yorkshire curd tart recipe

  1. Prepare the quark the evening before:
    1. Heat the milk in a large pot.
    2. Once it is gently simmering, add the lemon juice.
    3. Turn the heat to low and stir gently as the curds form.
    4. Don’t stir too quickly, otherwise the curd will fall apart.
    5. Once the mixture resembles a watery liquid with creamy lumps, remove the pan from the heat and allow the curds to cool in the whey.
    6. Drain the curds overnight using a clean tea towel, reserving the whey like buttermilk for making scones.
  • Preparation of the pastry:
    1. Mix the flour, baking powder, butter, sugar and a pinch of salt in a food processor until the butter is almost completely combined – leaving a few small lumps of butter to loosen the dough.
    2. Pour the dry mix onto a work surface and make a well in the center.
    3. Add a little cold water until you get a smooth but not sticky dough.
    4. As soon as the mixture comes together, knead it very lightly, wrap it in cling film and chill for at least 20 minutes.
    5. Can be prepared and refrigerated up to 2 days in advance.
  • To finish the filling:
    1. Beat butter and sugar until soft.
    2. Add the egg little by little.
    3. Add the curds to the mixture and whisk gently to break up any large lumps.
    4. After pureeing, add the currants.
  • Preheat the oven to 180°C/160°C fan/gas 4.
  • Roll out the dough to line a greased flat cake tin or 20cm diameter tart tin.
  • Distribute over the curd mixture.
  • Bake for 35-40 minutes until the dough is browned and cooked through.
  • Allow to cool, then cut into slices and serve plain or with a splash of cream.

Health Benefits of Yorkshire Curd Tart

Yorkshire Curd Tart, a traditional dessert from Northern England, not only pleases the taste buds but also offers several health benefits. This delicious treat is made from a combination of nutritious ingredients and can be enjoyed guilt-free. Let’s explore the health benefits of some key components of Yorkshire curd tart.

    1. Plain flour

The flour used in pie crust provides a good amount of complex carbohydrates, which are essential for energy production. It also contains some protein and fiber, which aid digestion and promote satiety.

    2. Salted butter

Although butter is often associated with indulgence, moderate consumption can still provide health benefits. Salted butter is a rich source of fat-soluble vitamins such as vitamins A, E and K. These vitamins are important for maintaining healthy skin, boosting immune function and promoting proper blood clotting.

    3. Powdered sugar

The sweetener for the cake is powdered sugar, which is used in both the crust and the filling. However, it should be noted that excessive sugar intake should be avoided. In moderation, powdered sugar can provide a quick energy boost. However, it is recommended to consume it in limited quantities as part of a balanced diet.

    4. Full fat Jersey milk

The main ingredient in the Yorkshire curd tart filling is full-fat Jersey milk. Jersey milk, which comes from Jersey cows, contains higher levels of protein and butterfat compared to regular milk. This makes it a great source of calcium, which is necessary for maintaining healthy bones and teeth. It also provides important vitamins such as B12, which supports the formation of red blood cells.

    5. Lemon juice

Adding lemon juice not only enhances the flavor of the cake but also offers some health benefits. Lemon juice is a rich source of vitamin C, known for its immune-boosting properties. It also aids digestion and can contribute to improved skin health.

    6. Currants

Last but not least, the Yorkshire curd tart is often garnished with currants. These tiny fruits are packed with antioxidants that protect the body from harmful free radicals. They also contain fiber, which promotes digestive health and helps regulate blood sugar levels.

By adding Yorkshire curd tart to your dessert repertoire, you can enjoy a delicious treat while benefiting from the nutrients contained in the ingredients. As with any dessert, moderation is the key to a balanced and healthy lifestyle.
