Ingredients
- a handful of dried porcini mushrooms
- 1 tbsp olive oil
- 25g butter
- 1 teaspoon cumin, toasted in a hot pan
- 2 minced garlic cloves
- a piece of peeled, chopped ginger
- 1 chopped green chili
- 2 chopped shallots
- 225g basmati rice
- 85 g chopped wild mushrooms
- 100g Greek yogurt
- 25g butter
- a splash of truffle oil
- chopped fresh coriander for serving
Preparation steps
- Place the dried porcini mushrooms in a bowl and pour in the warm water.
- Soak for 20 minutes, drain (reserve the broth) and chop.
- Add water until it reaches 700ml.
