  • a handful of dried porcini mushrooms
  • 1 tbsp olive oil
  • 25g butter
  • 1 teaspoon cumin, toasted in a hot pan
  • 2 minced garlic cloves
  • a piece of peeled, chopped ginger
  • 1 chopped green chili
  • 2 chopped shallots
  • 225g basmati rice
  • 85 g chopped wild mushrooms
  • 100g Greek yogurt
  • 25g butter
  • a splash of truffle oil
  • chopped fresh coriander for serving

Preparation steps

  1. Place the dried porcini mushrooms in a bowl and pour in the warm water.
  2. Soak for 20 minutes, drain (reserve the broth) and chop.
  3. Add water until it reaches 700ml.
  4. Heat olive oil and butter in a pan.
  5. Add the ingredients one at a time, fry for a minute at a time and add the cumin seeds, garlic cloves, ginger, green chillies and chopped shallots.
  6. Reduce the heat, add the basmati rice and fry until glossy.
  7. Add the chopped wild mushrooms, add the porcini mushrooms and fry for a minute.
  8. Stir in broth.
  9. Heat over low heat for 20 minutes while stirring.
  10. Add salt and fold in yogurt, butter and a dash of truffle oil.
  11. Sprinkle the chopped coriander on top.
