Whole grain soda bread with seeds

This “Whole Grain Seed Soda Bread” recipe is a perfect alternative to store-bought bread, which often contains too much salt, sugar, and preservatives. By baking your own bread, you can significantly improve its nutritional value. In just 10 minutes you can prepare and bake this healthy and delicious bread dough.

Ingredients

  • 450g wholemeal flour, plus some flour for dusting
  • 75 g four-seed mixture (sesame, sunflower, golden linseed and pumpkin)
  • 1 tsp baking soda
  • 1 tbsp black treacle
  • 150 ml cup of organic natural yoghurt, fill up to 450 ml with water

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6 and line a baking tray with baking paper.
  2. Place flour, seeds, baking soda and a pinch of salt in a large bowl and mix.
  3. Stir the syrup into the yogurt mixture and, once the syrup has dissolved, pour it over the dry ingredients.
  4. Mix with the knife blade until a soft, sticky dough forms.
  5. Leave for 5 minutes (this allows the liquid to be absorbed by the bran).
  6. Place the dough on a lightly floured surface and shape it into a round shape about 18cm in diameter.
  7. Be careful not to overwork the dough as it will still be very sticky. Treat it like scone dough and not bread dough.
  8. Lift the dough onto the baking sheet and bake for 25-30 minutes, until the crust is golden brown and the loaf sounds hollow when tapped.

Health Benefits of Whole Grain Seed Soda Bread

Whole grain soda bread with seeds is not only a delicious and hearty bread option, but also offers a number of health benefits. Packed with nutritious ingredients, this homemade bread is both filling and good for your body.

Nutrient-rich whole wheat flour

The recipe calls for 450g of wholemeal flour, which is made from ground whole wheat. Unlike refined white flour, whole wheat flour retains all parts of the wheat grain, including the bran, germ and endosperm. This means it contains higher levels of fiber, vitamins, minerals and antioxidants. Whole wheat flour is particularly rich in B vitamins, iron, manganese and selenium, which are essential for maintaining health.

Four seed mix for extra deliciousness

The addition of a four-seed mixture consisting of sesame, sunflower seeds, golden flaxseed and pumpkin seeds gives the soda bread additional health benefits. These seeds are packed with healthy fats, proteins, fiber and various essential nutrients. They are a great source of omega-3 fatty acids, which play a crucial role in heart health and reducing inflammation in the body. The four-seed blend also contains minerals such as magnesium, zinc and copper, which are important for maintaining a healthy immune system and overall well-being.

Baking soda for better digestion

Baking soda, also known as baking powder, is an essential ingredient in this soda bread recipe. In addition to its role in helping bread rise, it also provides digestive benefits. Baking soda can act as an antacid, helping to neutralize stomach acid and relieve heartburn or indigestion. Including it in the soda bread recipe can contribute to better digestive health.

The natural sweetness of black treacle

A tablespoon of black treacle adds a touch of natural sweetness to the soda bread. Black treacle is a thick, dark syrup that results from sugar refining. Although it is a form of sugar, it also contains small amounts of essential minerals such as iron, calcium and magnesium. In addition, black treacle gives the bread an intense flavor without having to use exclusively refined sugar.

Natural organic yogurt for improved texture

This soda bread recipe uses a 150ml cup of natural organic yogurt, which is then topped up to 450ml with water. Natural organic yogurt is made from milk fermented by live bacteria and provides probiotics that support a healthy gut. The yogurt also moisturizes and improves the texture of the bread, making it soft and tender.

In summary, whole grain seeded soda bread offers numerous health benefits due to its nutrient-rich ingredients. From the fiber-rich whole wheat flour to the healthy fats and minerals in the four-seed mixture, every component contributes to a healthy bread that is not only delicious, but also benefits your well-being.
