Ingredients

  • 2 x 150g bars of white chocolate
  • 2 x 300g cups of soft cheese (we used Philadelphia)
  • 284 ml pot of double cream
  • 50g powdered sugar
  • 170g punnet of raspberries
  • 5 tbsp raspberry jam
  • 85g amaretti cookies
  • 200g small strawberries
  • a few blueberries (optional)

Preparation steps

  1. Break the chocolate into a glass bowl, then place it over a pot of simmering water to melt. Make sure the bottom of the bowl does not touch the water.
  2. Line a lightly oiled 900g loaf tin with cling film.
  3. Whisk together the cheese, cream and sugar, preferably with an electric mixer, and then stir into the almost cooled, melted white chocolate until everything is well mixed.
  4. Mix 50g raspberries with 2 tablespoons of jam.
  5. Pour half of the cheese mixture into the loaf pan and then spoon the jammy raspberries into the center.
  6. Top with the remaining cheese mixture and smooth the top.
  7. Press in cookies.
  8. Cover and chill for 6 hours or overnight.
  9. Set aside about 6 strawberries.
  10. Halve the remaining strawberries and heat them in a pan with the remaining jam until they are soft.
  11. Blend the soft strawberries in a food processor or with a hand blender, then rub through a sieve to remove the seeds and prepare a sauce.
  12. If the sauce is too thick, add a drop of water.
  13. To serve, carefully tip the can onto a plate, lift it out and peel off the cling film.
  14. Halve the remaining strawberries and arrange on the cake along with the remaining raspberries and blueberries (if using).
  15. Pour some sauce over the top and serve the rest separately for drizzling.
