Welsh goat cheese and leek tart

Ingredients

  • 1 tbsp olive oil
  • 2 large leeks, sliced
  • 2 slices bacon, chopped
  • 1 x 210g sheet of ready-rolled puff pastry
  • 1 tbsp crème fraîche
  • 1 tbsp Dijon or whole grain mustard
  • 2 slices of firm Welsh goat cheese, from a 100g piece (we used organic goat cheese from Pant-Ysgawn Farm)

Tip

Freeze
You can freeze the tarts if you use fresh puff pastry, which is available in supermarket refrigerators.
Pre-frozen puff pastry should not be placed back in the freezer.

Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. Heat oil in a frying pan.
  3. Soak the leeks for 5 minutes.
  4. Add the bacon and fry for another 5 minutes.
  5. Season the mixture and transfer to a plate to cool.
  6. Roll out the dough.
  7. Cut two 12 x 18 cm rectangles from the dough.
  8. Save or freeze the remaining dough for later use.
  9. Place the dough rectangles on a baking sheet.
  10. Using a sharp knife, mark an edge inside each rectangle, about 1.5cm from the edge.
  11. Mix the crème fraîche and mustard in a bowl.
  12. Spread the crème fraîche-mustard mixture on the inside of the dough frames.
  13. Pour the leek and bacon mixture over the mustard mixture.
  14. Add the goat cheese to the leek and bacon mixture.
  15. Bake the tart in the oven for 15-20 minutes or until the pastry is crisp and golden brown.
  16. Serve the tart with a side of salad.
