  • 250 g salted butter, softened
  • 140g powdered sugar
  • 1 egg, separated, plus 2 egg yolks
  • 2 tsp vanilla extract
  • 100g ground rice
  • 300g plain flour
  • 140g preserving sugar (or Demerara sugar)

Prepare up to 2 months in advance if freezing, up to 4 days in advance if using immediately, and store in an airtight container. Preparation steps

  1. In a large bowl, mix butter, powdered sugar, three egg yolks and vanilla with a wooden spoon until creamy.
  2. Stir in the ground rice and flour – you may have to reach in with your hands at the end to mix all the dry ingredients.
  3. Roughly divide the mixture into 3 parts.
  4. Lay out three large sheets of baking paper and roll out a third of the dough on each into a long, thin sausage – about 2.5cm thick.
  5. Use the paper to roll it out as smoothly and evenly as possible.
  6. Beat the egg white lightly and brush it all over the dough.
  7. Sprinkle the preserving sugar on top and roll out so that the dough is completely covered.
  8. Wrap in paper and carefully place in the fridge for 30-40 minutes until firm.
  9. At this stage you can freeze well wrapped in cling film for up to 2 months.
  10. Preheat oven to 200°C/180°C fan/gas 6.
  11. Using a sharp knife, cut each roll into about 20-30 small cookies.
  12. Spread on baking trays lined with baking paper – they will spread out a little and leave gaps.
  13. Bake for 8-12 minutes until light golden.
  14. Allow to cool on the trays until the mixture is firm.
  15. Can also be frozen at this point for up to a month.
