The second tier of our three-tier wedding cake is a delicious, tangy lemon creation that is sure to impress. The refreshing citrus flavors shine through in every bite and leave you wanting more. Ingredients

  • 350g unsalted butter, softened
  • 350g golden powdered sugar
  • 6 eggs, beaten
  • 140g plain flour
  • 280g self-raising flour
  • Zest of 4 lemons, juice of 3 (approx. 100 ml/3½fl oz)
  • Zest and squeeze 2 lemons
  • 100g golden powdered sugar

Preparation steps

  1. Preheat the oven to 160°C/fan 140°C/gas 3.
  2. As before, prepare the inside and outside of a 23cm can.
  3. Cream butter and sugar until light and fluffy.
  4. Gradually stir in the eggs one at a time.
  5. Add a tablespoon of flour when it starts to split.
  6. Fold in flour and a pinch of salt.
  7. Add lemon zest and juice.
  8. Pour the mixture into the can.
  9. Bake for 1 hour and 15 minutes, until well risen and golden brown and a skewer inserted comes out clean.
  10. Meanwhile, make the syrup by heating the sugar, lemon zest and juice in a small saucepan until the sugar is dissolved. Put aside.
  11. Once the cake is out of the oven, let it cool until just warm.
  12. Poke holes all over the cake with a skewer.
  13. Pour the syrup over the top, allowing it to absorb completely after each addition.
  14. Allow to cool completely.
  15. Either wrap the cake or fill it and spread it with icing.
  16. The unfilled cake keeps well if you wrap it with baking paper and cling film for up to 4 days or in the freezer for up to a month.
