Ingredients

  • 5 x ingredients for simple vanilla cake (see “Goes well with” recipe below)
  • 5 x ingredients for basic vanilla buttercream (see recipe below)
  • 340g/12oz jar strawberry jam, optional (I used Tiptree Strawberry and Champagne)
  • 340 g apricot jam from the jar, warmed and sifted
  • 4 kg white, ready-to-roll icing (I used Regalice)
  • 15cm, 23cm and 30cm thin round cake boards
  • 40cm thick round cake board
  • Cocktail sticks
  • Palette knife
  • a roll of baking paper
  • a flat baking tray or a cake server
  • Powdered sugar for rolling out
  • String for measuring
  • 8 x Long Plastic Dowels
  • Kitchen scissors
  • 3½ m x 1½ cm white satin ribbon
  • Tube of UHU glue or similar
  • 12 cm and 15 cm large cake dummies made of Styrofoam
  • 18 gauge florist wire, cut into approximately 8″ x 4″ pieces
  • 15-20 white and light green hydrangea heads (make some smaller, others larger if you can); Your florist can advise you
  • 40cm, 30cm and 18cm cake boxes with lids when transporting the cake

Tip

Vanilla buttercream (enough for a 20 cm cake)

Preparation steps

  1. MAKING CAKE:
    1. Prepare the basic recipe for a simple vanilla cake (see “Goes well”), following the instructions below for each tier
    2. Let the cakes cool and drizzle with syrup
    3. The cakes can be frozen in advance without frosting
    4. Bake the bottom layer in a deep, round cake tin (30 cm) lined with baking paper for 2 hours and 15 minutes
    5. Bake the middle and top crusts in a prepared 15cm and 23cm cake tin for 1 hour 15 minutes and 1 hour 30 minutes respectively
    6. Allow all cakes to cool and drizzle with syrup
  • Layer and cover the cakes:
    1. Prepare buttercream as in the basic recipe
    2. Weigh out the buttercream and spread some on the 15 cm cake board
    3. Place the 15cm cake on the board and divide it into three layers using a bread knife
    4. Spread buttercream and jam between layers, then spread a thin layer of apricot jam all over the cake
    5. Repeat the process for the other cakes
    6. Leave the cakes covered with cling film overnight
  • Cover the cake with icing:
    1. Knead the icing until smooth and roll it out into a circle large enough to cover each cake
    2. Lift the icing over the cake and smooth it down the sides and top
    3. Trim off any excess frosting on the bottom of the cake board and smooth out any residue with your hands
    4. Let the cakes dry overnight
  • STACKING THE CAKES:
    1. Cut the dowels to the same length as the Styrofoam blocks
    2. Insert dowels into the cake in a square shape, marked by the Styrofoam doll
    3. Position the largest cake in the center of the covered board and secure ribbon around each cake
    4. Place the cakes in their boxes when moving to a venue
  • ON THE DAY – STACK THE CAKE AND DECORATE WITH FLOWERS:
    1. Cut the stems of the hydrangeas and divide a flower into smaller pieces to fill gaps
    2. Insert floristry wire into each stem and slide it into the Styrofoam dummy
    3. Lift the 9-inch cake onto the bottom Styrofoam doll
    4. Repeat with the top cake, filling any gaps with the broken flower head
    5. Place the last flower on the cake
  • Cutting the cake:
    1. Cut the cake crosswise on a grid into 2.5 x 5 cm pieces
    2. The large cake makes about 50 servings, the middle cake makes 30 servings and the top cake makes 12 servings
