Warm salad of spring vegetables with grilled lamb

  • 2 tbsp red wine vinegar

Preparation steps

  1. Prepare a bowl of ice water and bring a large pot of salted water to a boil.
  2. Boil the asparagus in the water for 3 minutes and then add it to the ice water with a slotted spoon.
  3. Cook the peas for 2 minutes and then add them to the ice water.
  4. Cook the broad beans for another 2 minutes, add them to the ice water and then remove them from the shell.
  5. Make a cross cut into the bottom of each tomato, then blanch them in boiling water for about 10 seconds before placing them in ice water.
  6. Peel the tomatoes, quarter them, remove the seeds and cut the flesh into small pieces.
  7. Gently heat the oil and coriander seeds in a small saucepan, then remove from the heat and stir in all the vegetables and vinegar.
  8. Season with salt and pepper and stir in tarragon and mint.
  9. Heat a large grill pan or grill.
