  • 1 kg butternut squash, roughly diced
  • 1½ tbsp olive oil
  • 1 garlic clove, crushed
  • 2 tsp thyme leaves
  • 1 tbsp balsamic vinegar

  • 2 x 400g cans of Puy lentils in water
  • ½ sliced ​​red onion
  • 100g bag of spinach
  • 150 g cherry tomatoes, halved

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 4.
