- 1 red onion, halved and sliced very thinly

- 2 tbsp extra virgin olive oil, plus extra
- 8 slices of Serrano ham
- Meat from 2 cooked chicken breasts, torn into pieces
- 100g bag of wild rocket
- Place the onion in a bowl
- Drizzle the vinegar over it
- Season with salt and pepper
- Let sit until onion is slightly softened, about 10 minutes
- In another large bowl, mix the parsley and tomatoes with the capers
- To serve, place the lentils in a colander
- Rinse the lentils with boiling water from the kettle
- Drain the lentils
- Mix the onions and their juice into the lentils
- Add 2 tablespoons olive oil
- Mix everything carefully
- Transfer this to a large serving platter
- Top with ham, chicken and arugula
- Drizzle with more olive oil and a little more vinegar if desired
