- 400g strozzapreti or casarecce pasta or another short pasta shape
- 100g walnuts
- 3 roasted red peppers, roughly chopped
- 25g Parmesan or a vegetarian alternative, plus some Parmesan for serving
- 1 small garlic clove, roughly chopped
- large package of basil, plus a few leaves for serving
- 2 tbsp extra virgin olive oil
- 50g mascarpone
- Cook the pasta according to the package instructions.
- Meanwhile, toast the walnuts in a dry pan for a few minutes.
- Place half of the walnuts in the small bowl of a food processor or hand-held food processor along with the red peppers, Parmesan cheese, garlic, basil, oil, and some seasoning.
- Blend the ingredients in the food processor to form a paste, adding a splash of water from the pasta if it is a little dry.
- Drain the pasta, reserving a cup of the cooking water.
- Add the pasta back to the pan and heat over low heat.
- Add pesto, mascarpone and 3-4 tablespoons of the reserved pasta water.
- Stir until the mascarpone is melted, adding a splash of pasta water if the sauce needs to be thinned.
- To serve, crush the remaining walnuts in your hand and sprinkle over the noodles.
