Ingredients

  • 225g self-raising flour
  • ½ tsp ground cinnamon
  • 175g soft butter
  • 100g light muscovado sugar
  • 3 tbsp clear honey
  • 2 eggs, beaten
  • 2 medium-sized, ripe bananas, about 250g total weight in the peel
  • 100g pitted dates
  • 50g pack of walnut pieces

Preparation steps

  1. Preheat the oven to 160°C/gas 3/fan 140°C.
  2. Line the bottom and long sides of a 900g loaf tin with baking paper and butter the tin and paper.
  3. Place the flour, cinnamon, butter, sugar, 2 tablespoons honey and the eggs in a large mixing bowl.
  4. Mash the bananas and chop the dates (this is best done with kitchen scissors) and add them to the bowl.
  5. Using a wooden spoon or hand mixer, beat the mixture until well combined, 2-3 minutes.
  6. Pour the mixture into the prepared tin and smooth the lid.
  7. Scatter the walnut pieces over the dough.
  8. Bake for 1 hour, then press lightly on the top – it will feel firm once cooked. If not, bake for another 10 minutes.
  9. Let the cake cool for 15 minutes and then use the paper to lift it out of the tin.
  10. When the cake is completely cool, drizzle the remaining honey over the top.
  11. To serve, cut the cake into thick slices.
