  • 10 Vol-au-Vent cases (see “goes well with”)
  • 200g smoked trout
  • 1-2 tsp horseradish sauce (depending on strength)
  • 6 tbsp crème fraîche
  • 1 heaping tablespoon chopped dill and additional sprigs for serving
  • Squeeze out lemon juice
  • 10 short asparagus spears, cleaned

Preparation steps

  1. Cook the asparagus in boiling salted water for 3-4 minutes until just tender.
  2. Drain and rinse in cold water to stop them from cooking further, then pat dry.
  3. Cut the asparagus tips from the stems so they are about 2cm long and set aside.
  4. Cut the stems into small pieces.
  5. Cut the trout into small pieces and place in a bowl.
  6. Add chopped asparagus spears, horseradish, crème fraîche, dill and lemon juice and season.
  7. Refrigerate until ready to use.
  8. Divide between 10 Vol-au-Vent cases.
  9. Place an asparagus tip and a sprig of dill on top of each.
