  • 150 ml Marsala or Madeira
  • piece of butter
  • Seasonal vegetables for serving (optional)
  • Potatoes for serving (optional)
  • 600g (3 large) red onions, sliced ​​very thinly
  • 6 juniper berries, lightly crushed
  • Leaves from some thyme branches
  • 100 ml red wine vinegar
  • 5 tbsp light muscovado sugar

Preparation steps

  1. For the relish, place the onions, juniper and thyme in a large pot, season with 1 teaspoon of salt and a little pepper.
  2. Cook over high heat for 10 minutes, stirring regularly as the onions begin to soften.
  3. Add vinegar, sugar and 100 ml water.
  4. Cover, cook for 5 minutes, then cover and simmer gently for 5 minutes until tender and some juice remains.
  5. Meanwhile, remove any large tubes, membranes, or cartilage from the liver.
  6. Pat dry with kitchen paper.
  7. Heat 1 teaspoon oil in a large skillet and add the prosciutto.
  8. Fry for 1 minute on each side until golden brown and crispy.
  9. Set aside on a plate and keep warm in the oven on a low heat.
  10. Add a splash of oil to the pan.
  11. Dust the liver slices in flour and dab off any excess flour.
  12. Place the liver in the hot pan, sprinkle in the sage, then fry for 1 minute on each side if the liver is thinly sliced, or longer if it is thicker.
  13. When the liver is golden brown and just pink in the center, transfer it to the plate in the oven along with the crispy sage.
  14. Place the pan back on the stove and add the Marsala.
  15. Cook until syrupy.
  16. Melt the butter in this sauce, season to taste and then set aside.
  17. If your sauce boils down too quickly, just add a little water.
  18. Arrange the liver, prosciutto, sage and warm onion relish on plates and spoon the sauce over them.
  19. Serve with seasonal vegetables and potatoes if desired.
