- 400 g “00” or biscuit flour
- 7g sachet or 1½ tsp fast-acting dry yeast
- 50g golden powdered sugar
- 100 ml milk, warmed
- 3 large eggs, beaten
- 150g butter (from a 250g pack – use the rest for the filling), very soft but not melty or greasy
- 100g almond flakes
- 140g poppy seeds
- 100 g butter (reserve 1 tbsp for greasing)
- 1 tbsp vanilla extract
- 4 tbsp clear honey
- 85g powdered sugar
- 2 tsp vanilla extract
- Combine flour, yeast, sugar, milk, eggs and ½ teaspoon salt in a freestanding mixer fitted with a dough hook and mix for 5 minutes, or place in a large bowl and mix with your hands for 10 minutes – the dough should look pretty sticky at this stage .
- Add the butter a little at a time, mixing after each addition until fully incorporated.
- Mix for a few more minutes until a smooth mixture forms.
- Place in a clean, oiled bowl, cover with oiled cling film and let rise at room temperature for 3 hours (in a cool place, otherwise the butter in the dough will start to melt), then place in the fridge and leave overnight (you can Use dough immediately, but the taste will not be as good).
- Place the almonds in a large frying pan and toast them for a few minutes until they begin to brown. Then add the poppy seeds and roast for a few more minutes until aromatic. Allow to cool completely.
- Place the cooled seeds and nuts in a food processor along with butter, vanilla and honey and mix into a smooth paste.
- If using dough from the refrigerator, remove it at least 3 hours (or until it reaches room temperature) before using.
- Generously grease a large bundt pan with butter (ours has a capacity of 2.5 liters).
- Transfer the dough to the work surface and knead it gently to remove the air bubbles.
- Roll out the dough into a rectangle about 35 x 45 cm and spread the poppy seed butter over the entire surface.
- Roll up the dough tightly, starting from one long side.
- Place the dough in a ring shape in the bundt pan with the seam side up, inserting one end into the other.
- Cover the tin with oiled cling film and let the dough rise for 30-40 minutes, or until it fills about ¾ of the tin.
- Preheat oven to 200°C/180°C fan/gas 6.
- Uncover and bake for 35 minutes until golden brown.
- In the meantime, for the glaze, mix the powdered sugar and vanilla with 2 tablespoons of water.
- Turn the cake out onto a cake rack and spread the vanilla icing all over – apply until everything is used up.
- Allow to cool for 10 minutes before serving.
