Preparation steps

  1. Place the whole oranges and lemon juice in a large preserving pot and cover with 2 liters of water. If the fruit is not covered, use a smaller pan.
  2. If necessary, weigh down the oranges with a heatproof plate to keep them submerged.
  3. Bring to a boil, cover, and simmer very gently for about 2 hours, or until the shell can be easily pierced with a fork.
  4. Heat half the sugar in a very low oven.
  5. Pour the cooking water from the oranges into a jug and place the oranges in a bowl.
  6. Return the cooking liquid to the pan.
  7. Allow the oranges to cool until they are easy to handle, then cut them in half.
  8. Remove any seeds and pulp and add them to the reserved orange liquid in the pan.
  9. Let it boil for 6 minutes, then strain the liquid through a sieve into a bowl and press the pulp through with a wooden spoon.
  10. Pour half of this liquid into a preserving pot.
  11. Cut the peel into thin strips with a sharp knife.
  12. Add half of the bowl of warm sugar to the liquid in the preserving pot.
  13. Stir over low heat until all the sugar has dissolved, about 10 minutes.
  14. Bring to a boil and allow to bubble rapidly for 15-25 minutes until it reaches setting point.
  15. Remove the pan from the heat and remove any foam from the surface.
  16. Let the jam sit in the pan for 20 minutes to cool slightly and remove the peel.
  17. Pour into sterilized jars, seal and label.
  18. Repeat from step 3 for the second batch, warming the other half of the sugar first.
