- 200 g high-quality dark chocolate, around 60% cocoa content
- 200g butter
- 1 tbsp instant coffee granules
- 85g self-raising flour

- 75 ml buttermilk (5 tbsp)

- Grease a 20cm diameter (7.5cm deep) round cake tin and line the base.
- Preheat the oven to fan 140°C/fan 160°C/gas 3.
- Break 200g of good quality dark chocolate into pieces and place in a medium, heavy-based pan.
- Cut 200 g butter into pieces and sprinkle with the chocolate.
- Mix 1 tablespoon of instant coffee granules with 125 ml of cold water and pour it into the pan.
- Heat over low heat until melted – do not overheat. Or melt in the microwave on medium for about 5 minutes, stirring halfway through.
- Mix 85g self-raising flour, 85g plain flour, ¼ baking soda, 200g light muscovado sugar, 200g golden icing sugar and 25g cocoa powder in a large bowl, mixing with your hands to remove any lumps.
- Whisk 3 medium eggs in a bowl and stir in 75 ml (5 tbsp) buttermilk.
- Pour the melted chocolate mixture and egg mixture into the flour mixture, stirring until well combined and a smooth, fairly runny consistency.
- Pour this into the tin and bake for 1 hour 25 – 1 hour 30 minutes – when you insert a skewer into the center it should come out clean and the top should feel firm (don’t worry if it is a little breaks).
- Let it cool in the tin (don’t worry if it dips slightly), then turn it out onto a wire rack to cool completely.
- When the cake is cold, cut it horizontally into three pieces.
- Preparation of the ganache: Cut 200 g of high-quality dark chocolate into small pieces and place in a bowl.
- Pour a 10-ounce carton of double cream into a saucepan, add 2 tablespoons golden powdered sugar and heat until just about boiling.
- Remove from heat and pour over the chocolate.
- Stir until the chocolate has melted and the mixture is smooth.
- Place the layers on top of each other with some ganache.
- Pour the rest of the ganache over the cake, letting it cascade down the sides and smoothing with a spatula until covered.
- Decorate with grated chocolate or a stack of chocolate chips.
- The cake stays moist and sticky for 3-4 days.
