Ingredients

  • 1kg Bramley apples
  • 140g golden powdered sugar
  • ½ tsp cinnamon
  • 3 tbsp flour
  • 225g butter, room temperature
  • 50g golden powdered sugar plus a little more
  • 2 eggs
  • 350 g plain flour, preferably organic
  • To serve, lightly whipped cream

Preparation steps

  1. Place a layer of paper towels on a large baking sheet.
  2. Quarter the apples, core them, peel them, cut them into slices about 5 mm thick and spread them evenly on the baking tray.
  3. Place paper towels on top and set aside while you prepare the dough and let it cool.
  4. Mix butter and sugar in a large bowl until well combined.
  5. Beat a whole egg and an egg yolk (save the white for glazing later).
  6. Mix for a little less than 1 minute – it will look a bit like scrambled eggs.
  7. Now use a wooden spoon to incorporate a third of the flour at a time until it starts to clump.
  8. Finally, gather it together with your hands.
  9. Gently shape the dough into a ball, wrap it in cling film and chill for 45 minutes.
  10. Mix the 140g sugar, cinnamon and flour for the filling in a bowl large enough to hold the apples later.
  11. Once the dough has cooled, preheat the oven to 190°C/fan 170°C/gas 5.
  12. Beat the egg whites lightly with a fork.
  13. Cut off a third of the dough and leave it wrapped while you roll out the rest.
  14. Use this to line a cake tin – 20-22 cm round and 4 cm deep – leaving a slight overhang.
  15. Roll out the remaining third into a circle about 28 cm in diameter.
  16. Pat the apples dry with kitchen paper and add them to the bowl with the cinnamon-sugar mixture.
  17. Mix briefly with your hands and immediately pour into the dough-lined form.
  18. Brush the edge of the dough with a little water and place the dough lid on the apples. As you do this, press the edges together to seal them.
  19. Trim the edge with a sharp knife and make five small slits in the top of the lid to allow steam to escape.
  20. (Can be frozen at this time.)
  21. Brush everything with egg white and sprinkle with powdered sugar.
  22. Bake for 40-45 minutes until golden brown, then remove and let rest for 5-10 minutes.
  23. Sprinkle with more sugar and serve warm from the oven with lightly whipped cream.
