  • 100 g butter, room temperature
  • 120g light brown sugar
  • 1 egg
  • 100g self-raising flour
  • 50g oat flakes
  • 100g milk chocolate chips
  • 1 tbsp mini fudge pieces
  • 4 x 25g packs of Twix bars, chopped

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Line 2 baking trays with greaseproof baking paper.
  3. Mix butter and sugar in a table mixer until light and light.
  4. Add the egg, flour, oat flakes and a pinch of salt and stir again.
  5. Stir in chocolate chips and fudge pieces.
  6. Drop rounded tablespoons of cookie dough onto the prepared baking sheets – you should end up with 12.
  7. Gently press Twix pieces into the top of each mound.
  8. Bake in the oven for 12-15 minutes or until the edges are golden brown.
  9. Allow to cool on the paper for a few minutes.
  10. Transfer to a rack to cool completely.
  11. Amazing in ice cream sandwiches!
