- Vegetable oil, for frying
- 2 racks of beef ribs (4 bones each)
- 750 ml bottle of red wine
- 8 carrots, peeled but left whole
- 2 tbsp red onion jam
- large bunch of parsley, chopped
- Slowly cook the ribs at least a day before eating.
- Preheat the oven to 160°C/140°C fan/gas 3.
- If you have an ovenproof roasting pan, heat it with oil and brown the seasoned meat sides of the ribs well.
- If not, do this in a roasting pan and place the ribs, flesh side down, in a roasting pan.
- Place the whole carrots between the ribs and pour the wine over them.
- Cover the roasting pan tightly with foil and place in the oven for 4 hours. Turn any carrots that were not submerged in the wine halfway through.
- Once cooked, allow to cool, then place the ribs and carrots on a tray and pour the pan juices into a bowl.
- Cover everything and chill overnight. Can be prepared up to two days in advance.
- To prepare the dish, preheat the oven to 220°C/200°C fan/gas 7.
- Place the ribs, bone side down, in a roasting pan and roast for 25 minutes, until very brown, sizzling and crispy around the edges.
- Meanwhile, remove the solidified drippings from the sauce and melt half in a frying pan until it sizzles slightly.
- Add the carrots and lightly fry to reheat.
- Season with sea salt, mix in the parsley and lift the carrots from the fat into a serving bowl.
- Put the sauce with the red onion jam in a pot and bring to the boil.
- Skim off the foam and continue cooking and stirring until a sticky sauce forms.
- Serve everything together on a large board, stacking the racks on top of each other and first cutting away a few ribs.
