Ingredients
- 425 ml milk
- 1 small onion, cut into thick slices
- Pinch of nutmeg
- 2 fresh or dried bay leaves
- 4 tablespoons butter, plus a little butter for greasing
- 7 tbsp flour
- 1 heaped teaspoon English mustard
- 4 eggs, separated
- 140 g extra mature cheddar, finely grated
- 142 ml pot of double cream
Preparation steps
- Preheat the oven to 180°C/fan 160°C/gas. 4. Add milk, onions, nutmeg and bay leaves to a pan. Bring to the boil and then let steep for 30 minutes. Brush 8 x 150 ml ramekins with butter.
- Melt the butter in a second pot. Stir in the flour and cook gently, stirring, for 1 minute. Remove from the heat and gradually stir in the milk until smooth. Discard onion and bay leaf. Return to heat and stir until sauce boils and thickens.
- Remove from heat, stir in mustard, egg yolk and three quarters of the cheese and season. Pour the mixture into a large mixing bowl.
- In another large bowl, beat the egg whites until stiff. Bring a full kettle to the boil. Gently fold the egg whites into the cheese mixture and fill the ramekins two-thirds full.
- Place the ramekins in a roasting pan and then pour the boiling water into the pan until it comes halfway up the ramekins.
- Bake for 15-20 minutes or until the dough has risen, just set and is still a little wobbly. Remove from the mold and let cool.
- To serve, preheat the oven to 220°C/fan 200°C/Gas 7 (or leave it at 190°C/fan 170°C/Gas 5 if cooking the lamb).
- Loosen the edges of the soufflés with a knife and then turn them upside down into a shallow ovenproof dish.
- Sprinkle with the remaining cheese and pour 1 tablespoon of cream over each soufflé.
- Bake for 10-12 minutes until the top is puffed and golden brown (or 12-15 minutes at a lower temperature).
- Serve immediately with the crispy celery and apple salad (see below).
