  • 425 ml milk
  • 1 small onion, cut into thick slices
  • Pinch of nutmeg
  • 2 fresh or dried bay leaves
  • 4 tablespoons butter, plus a little butter for greasing
  • 7 tbsp flour
  • 1 heaped teaspoon English mustard
  • 4 eggs, separated
  • 140 g extra mature cheddar, finely grated
  • 142 ml pot of double cream

Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas. 4. Add milk, onions, nutmeg and bay leaves to a pan. Bring to the boil and then let steep for 30 minutes. Brush 8 x 150 ml ramekins with butter.
  2. Melt the butter in a second pot. Stir in the flour and cook gently, stirring, for 1 minute. Remove from the heat and gradually stir in the milk until smooth. Discard onion and bay leaf. Return to heat and stir until sauce boils and thickens.
  3. Remove from heat, stir in mustard, egg yolk and three quarters of the cheese and season. Pour the mixture into a large mixing bowl.
  4. In another large bowl, beat the egg whites until stiff. Bring a full kettle to the boil. Gently fold the egg whites into the cheese mixture and fill the ramekins two-thirds full.
  5. Place the ramekins in a roasting pan and then pour the boiling water into the pan until it comes halfway up the ramekins.
  6. Bake for 15-20 minutes or until the dough has risen, just set and is still a little wobbly. Remove from the mold and let cool.
  7. To serve, preheat the oven to 220°C/fan 200°C/Gas 7 (or leave it at 190°C/fan 170°C/Gas 5 if cooking the lamb).
  8. Loosen the edges of the soufflés with a knife and then turn them upside down into a shallow ovenproof dish.
  9. Sprinkle with the remaining cheese and pour 1 tablespoon of cream over each soufflé.
  10. Bake for 10-12 minutes until the top is puffed and golden brown (or 12-15 minutes at a lower temperature).
  11. Serve immediately with the crispy celery and apple salad (see below).
