  • 400 g canned chickpeas, drained and rinsed

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. In a 20 x 30 cm roasting tin, combine the chickpeas, oil, garlic, shallots, ginger, tomato puree, stock and most of the turmeric and chilli flakes.
  3. Stir the mixture well and season with salt and pepper.
  4. Bake in the oven for 20-25 minutes until the mixture bubbles and the liquid has reduced.
  5. In the meantime, pat the cod fillets dry.
  6. On a flat plate, mix the remaining turmeric and chili flakes with a large pinch each of salt and freshly ground black pepper.
  7. Press the cod fillets into the spice mixture to coat.
  8. Remove the roasting pan from the oven and carefully place the breaded cod fillets and frozen spinach between the chickpeas.
  9. Cook for another 10 minutes.
  10. Gently stir the spinach into the chickpeas.
  11. Return the dish to the oven for another 5 minutes, until the cod is cooked through and opaque.
  12. Divide the mixture into serving bowls.
  13. Sprinkle fresh cilantro over each bowl.
