- 1½ tbsp chipotle paste
- 400 g canned chopped tomatoes
- 400 g canned kidney beans, drained and rinsed
- 198g can sweetcorn, drained
- 2 corn tortillas, cut into triangles
- small handful of grated cheddar
- 2 spring onions, finely chopped
- In a deep, ovenproof baking dish, fry the onions in the oil for 8 minutes, until soft.
- Add the cumin and cook for 1 minute more.
- Stir in the minced meat and add a little more oil if necessary.
- Increase heat and cook, stirring occasionally, until ground beef is browned, 4-6 minutes.
- Stir in chipotle paste, tomatoes and half a can of water and simmer for 5 minutes.
- Mix in the beans and sweetcorn and cook for a few more minutes until the mixture is thick and piping hot and the minced meat is cooked through.
