  • 500g pack of minced turkey meat
  • 1 heaped tablespoon of korma paste
  • 1 teaspoon peanut, vegetable or olive oil
  • 1 onion, finely chopped
  • 500 ml chicken broth
  • 175 ml low-fat or light coconut milk
  • large handful of sugar snap peas, halved diagonally
  • 16 cherry tomatoes, halved
  • 1 tbsp toasted flaked almonds
  • some coriander leaves (optional)

  2. Form walnut-sized meatballs from the mixture.
  3. Heat the oil in a non-stick frying pan.
  4. Cook the meatballs for 5 minutes, turning occasionally, until browned all over.
  5. Heat the remaining curry paste in a pot.
  6. Add the onion and cook over low heat until softened, about 5 minutes.
  7. Be careful not to burn the paste and add a splash of water if necessary.
  8. Pour in the broth and coconut milk and bring to the boil.
  9. Reduce the heat to low and add the meatballs.
  10. Cook for 10 minutes, or until turkey is cooked through and sauce has thickened slightly.
  11. Add snow peas and tomatoes and cook for another 2 minutes.
  12. Sprinkle with almonds and coriander if desired.
