Ingredients
- 1 tbsp rapeseed oil
- 500 g minced turkey leg meat (7% fat)
- 2 large cloves of garlic, finely grated
- 1 chili, deseeded and chopped
- ½ tsp dried oregano
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tbsp smoked paprika powder
- 500g cardboard passata
- 2 x 400 g cans of red kidney beans, drained (liquid reserved)
- 2 tsp vegetable stock powder
- 2 red peppers, deseeded and diced
- 4 small sweet potatoes (approx. 140g each)
- 2 avocados
- 1 lime, juiced
Preparation steps
- Heat the oil in a large skillet over medium-high heat
- Add the minced meat and break it up with a wooden spoon
- Add the garlic and chilli and cook for 10 minutes until the minced meat is cooked through
- Add the herbs and spices and cook for another minute
- Add the passata, the remaining bean liquid, the bouillon powder and the paprika
- Cover and cook until slightly thickened, 15-20 minutes
- Add the beans and cook for another 3-5 minutes
- Meanwhile, prick two of the sweet potatoes all over with a fork, then microwave on high for 7-10 minutes until tender
- Mash one of the avocados with half of the lime juice in a small bowl
- To serve, halve the potatoes, top with half the chilli and finish with the mashed avocado
- Refrigerate the rest for another day
- The chiles will keep covered and refrigerated for four days or frozen for three months
- Reheat in the microwave or skillet over low heat until piping hot
- Serve as described above with the remaining sweet potatoes and pureed avocado and lime juice
