  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 85g porridge
  • 450g minced turkey
  • 100 g dried apricots, finely chopped
  • 1 large carrot, grated
  • 1 egg, beaten
  • Buns and cucumber slices for serving

Preparation steps

  1. Heat 1 tablespoon of oil in a pan and lightly fry the onion for 5 minutes until soft.
  2. Add the garlic and cook for 1 minute.
  3. Add the oats and fry for another 2 minutes.
  4. Transfer to a bowl and set aside to cool.
  5. Add the remaining ingredients to the cooled mixture and mix well with your hands.
  6. Season to taste and shape into 8 patties.
  7. Preheat the oven to 200°C/fan 180°C/gas 6.
  8. Heat the remaining olive oil in a large, non-stick frying pan and fry the burgers on each side until they have a nice color (3-4 minutes).
  9. Place on a baking sheet and bake in the oven for 10-15 minutes.
  10. Serve in rolls with spicy tomato chutney and cucumber slices.
  11. For the chutney, heat 1 tablespoon of olive oil in a pan and add 1 finely chopped onion.
  12. Cook for 5 minutes until tender.
  13. Stir in 1 crushed garlic clove and cook for another minute.
  14. Add 1 tbsp dried tomato paste, a 400g tin of good quality chopped tomatoes and a pinch of sugar.
  15. Cook gently for 20-25 minutes until rich and thick.
  16. Season to taste and allow to cool before serving.
