Ingredients

  • 300g young new potatoes
  • 2 trout fillets (approx. 140g each)
  • vegetable oil
  • 200g pack green vegetable mix (ours contained tender stem broccoli and asparagus)
  • 200 ml cup of hollandaise sauce
  • small bunch of mint, chopped

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Boil the potatoes in a pot of salted water for 10 minutes until tender.
  3. Drain and cut into thick slices.
  4. Spread the potato slices on a baking tray.
  5. Brush with a little oil.
  6. Add some spice.
  7. Bake for 20 minutes.
  8. Take the tray out of the oven and push the potatoes to the edge.
  9. Place the vegetable mixture in the center and toss the vegetables in the oil with a fork.
  10. Push the vegetables to the edge too.
  11. Place the trout fillets in the middle of the tray.
  12. Season the trout.
  13. Place the tray in the oven for another 12 minutes.
