- 2 tbsp olive oil

- 2 carrots, chopped

- 2 x 400g cans of white beans, rinsed and drained
- 300 ml white wine
- 12 Toulouse sausages
- 100g stale bread
- Heat 1 tablespoon olive oil in a large pan

- Cook over gentle heat for 5 minutes
- Stir in beans, wine and 200 ml water
- Bring to the boil and simmer for 5 minutes
- In the meantime, preheat the oven to 180°C/160°C fan/gas 4
- In a large skillet, heat the remaining olive oil over medium-high heat
- Fry the sausages all over
- Rub the inside of a baking dish or casserole dish with the remaining garlic clove
- Add half of the bean mixture
- Arrange the sausages on top
- Finish with another layer of beans
- Cover with foil and place in the oven for 45 minutes
- While it’s cooking, pulse the bread in a food processor to make breadcrumbs
- Remove the baking dish from the oven
- Remove the foil and sprinkle the breadcrumbs on top
- Return to the oven and bake for another 20 minutes, until the breadcrumbs are golden brown and crispy
- Serve with a crisp green salad
