Toulouse sausage cassoulet

  • 2 tbsp olive oil
  • 2 onions, chopped
  • 2 carrots, chopped
  • 4 garlic cloves, crushed
  • 4 tomatoes, chopped
  • Bouquet garni (fresh parsley, thyme and bay leaf tied together with a string)
  • 2 x 400g cans of white beans, rinsed and drained
  • 300 ml white wine
  • 12 Toulouse sausages
  • 100g stale bread

Preparation steps

  1. Heat 1 tablespoon olive oil in a large pan
  2. Add chopped onions, carrots, 3 cloves of garlic, tomatoes, bouquet garni and some salt and pepper
  3. Cook over gentle heat for 5 minutes
  4. Stir in beans, wine and 200 ml water
  5. Bring to the boil and simmer for 5 minutes
  6. In the meantime, preheat the oven to 180°C/160°C fan/gas 4
  7. In a large skillet, heat the remaining olive oil over medium-high heat
  8. Fry the sausages all over
  9. Rub the inside of a baking dish or casserole dish with the remaining garlic clove
  10. Add half of the bean mixture
  11. Arrange the sausages on top
  12. Finish with another layer of beans
  13. Cover with foil and place in the oven for 45 minutes
  14. While it’s cooking, pulse the bread in a food processor to make breadcrumbs
  15. Remove the baking dish from the oven
  16. Remove the foil and sprinkle the breadcrumbs on top
  17. Return to the oven and bake for another 20 minutes, until the breadcrumbs are golden brown and crispy
  18. Serve with a crisp green salad
