  • 250g pack of filled tortellini (we used ricotta and spinach)
  • 2 slices of bacon lean back
  • 25g walnut pieces
  • Zest of ½ lemon, juice of 1
  • 1 tbsp finely grated Parmesan, plus some Parmesan for serving
  • 1 tablespoon olive oil, plus a little olive oil for serving
  • 100g bag of salad spinach
  • 2 tbsp ricotta

Preparation steps

  1. Heat the grill.
  2. Cook the pasta according to the package instructions.
  3. Put the noodles in a sieve and let them cool under gently running water.
  4. Meanwhile, grill the bacon on a baking sheet until golden brown and crispy around the edges.
  5. When the walnuts are almost ready, put them on the tray and toast them a little.
  6. Cut the bacon into strips.
  7. Mix lemon zest, lemon juice, Parmesan and oil in a large bowl.
  8. Pepper.
  9. Add spinach, tortellini, bacon and walnuts to the bowl.
  10. Mix well to combine.
  11. Add small dollops of ricotta to the mixture.
  12. Gently stir again to distribute the ricotta.
  13. Season to taste.
  14. Serve with a little oil and additional Parmesan if desired.
