- 250g pack of filled tortellini (we used ricotta and spinach)
- 2 slices of bacon lean back
- 25g walnut pieces
- Zest of ½ lemon, juice of 1
- 1 tbsp finely grated Parmesan, plus some Parmesan for serving
- 1 tablespoon olive oil, plus a little olive oil for serving
- 100g bag of salad spinach
- 2 tbsp ricotta
- Heat the grill.
- Cook the pasta according to the package instructions.
- Put the noodles in a sieve and let them cool under gently running water.
- Meanwhile, grill the bacon on a baking sheet until golden brown and crispy around the edges.
- When the walnuts are almost ready, put them on the tray and toast them a little.
- Cut the bacon into strips.
- Mix lemon zest, lemon juice, Parmesan and oil in a large bowl.
- Add spinach, tortellini, bacon and walnuts to the bowl.
- Mix well to combine.
- Add small dollops of ricotta to the mixture.
- Gently stir again to distribute the ricotta.
