- 3 whole garlic bulbs
- 2 tbsp olive oil
- 375 g block puff pastry made from pure butter
- 1½ tbsp honey Dijon mustard (we used Maille) or 2 tsp Dijon mustard and a pinch of honey
- 325 g cherry tomatoes, halved
- 1 egg, beaten
- 150g pack of soft goat cheese (we used Chavroux – other soft goat cheese would work too, but mix with a little milk to loosen it)
- a handful of basil leaves
- Preheat the oven to 190°C/170°C fan/gas 5.
- Cut the tops off the garlic bulbs and place them on a sheet of foil.
- Drizzle 1 tablespoon of oil over it, season and wrap in a packet.
- Roast for 50 minutes or until tender, then allow to cool – this can be done the day before.
- Cut the dough into quarters with a sharp knife.
- Roll out each piece and cut into a 14cm diameter circle.
- Use a saucer as a guide if you don’t have a cookie cutter.
- Place the circles on a baking tray and score a 1 cm wide border on the edge of each. Be careful not to cut all the way through.
- Prick the dough all over with a fork, leaving out the edge and chill.
- Increase the oven to 200°C/180 fan/gas 6.
- When the garlic is cool enough to handle, squeeze the pulp from the bulbs into a bowl.
- Add the mustard, remaining oil and some spice and mash into a paste with a fork.
- Spread these over the dough, leaving the edge free, then place the tomato halves on top with the skin side down and season well.
- Brush the edges of the dough with egg, sprinkle the goat cheese on top and bake for 25-30 minutes, until the dough is golden brown and crispy and the tomatoes begin to shrink.
- Remove from tray and let cool to room temperature.
- Sprinkle the basil on top before serving.
