Tomato salad ‘Maman Blanc’

  • 800 g tomatoes (Coeur de Boeuf or Marmande), stemmed and seeded (see tip below left)
  • 1 banana shallot or small red onion, peeled and finely chopped
  • ½ garlic clove, crushed
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 4 tbsp extra virgin olive oil
  • 6 sprigs of basil or flat-leaf parsley, leaves picked and torn or roughly chopped


Select tomatoes

The success of this salad depends on the ripeness and quality of the tomatoes. The salt flavors the tomatoes and dries them out slightly, leaving a puddle of juice at the bottom of the bowl.

Preparation steps

  1. Cut the tomatoes crosswise into slices about 5mm thick.
  2. Arrange the tomato slices in a shallow oval bowl.
  3. Scatter the shallots over the tomatoes.
  4. Season the dish with 4 pinches of sea salt.
  5. Set the bowl aside.
  6. For the dressing, mix garlic, wine vinegar, Dijon mustard and 1 tablespoon warm water.
  7. Slowly add the oil to the dressing, stirring constantly.
  8. Stir in another tablespoon of warm water to emulsify and thin the dressing.
  9. Season the dressing with sea salt and pepper.
  10. Pour the dressing over the tomatoes in the serving bowl.
  11. Let the dish marinate at room temperature for about 1 hour.
  12. To serve, sprinkle the herbs over the salad.
