- 800 g tomatoes (Coeur de Boeuf or Marmande), stemmed and seeded (see tip below left)
- 1 banana shallot or small red onion, peeled and finely chopped
- ½ garlic clove, crushed
- 1 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 4 tbsp extra virgin olive oil
- 6 sprigs of basil or flat-leaf parsley, leaves picked and torn or roughly chopped
The success of this salad depends on the ripeness and quality of the tomatoes. The salt flavors the tomatoes and dries them out slightly, leaving a puddle of juice at the bottom of the bowl.
- Cut the tomatoes crosswise into slices about 5mm thick.
- Arrange the tomato slices in a shallow oval bowl.

- Let the dish marinate at room temperature for about 1 hour.
