Ingredients

  • 800 g tomatoes (Coeur de Boeuf or Marmande), stemmed and seeded (see tip below left)
  • 1 banana shallot or small red onion, peeled and finely chopped
  • ½ garlic clove, crushed
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 4 tbsp extra virgin olive oil
  • 6 sprigs of basil or flat-leaf parsley, leaves picked and torn or roughly chopped

Tip

Select tomatoes

The success of this salad depends on the ripeness and quality of the tomatoes. The salt flavors the tomatoes and dries them out slightly, leaving a puddle of juice at the bottom of the bowl.

Preparation steps

  1. Cut the tomatoes crosswise into slices about 5mm thick.
  2. Arrange the tomato slices in a shallow oval bowl.
  3. Scatter the shallots over the tomatoes.
  4. Season the dish with 4 pinches of sea salt.
  5. Set the bowl aside.
  6. For the dressing, mix garlic, wine vinegar, Dijon mustard and 1 tablespoon warm water.
  7. Slowly add the oil to the dressing, stirring constantly.
  8. Stir in another tablespoon of warm water to emulsify and thin the dressing.
  9. Season the dressing with sea salt and pepper.
  10. Pour the dressing over the tomatoes in the serving bowl.
  11. Let the dish marinate at room temperature for about 1 hour.
  12. To serve, sprinkle the herbs over the salad.

They also contain a powerful antioxidant called lycopene, which has been linked to a reduced risk of certain cancers, particularly prostate cancer. Tomatoes are also known to support heart health and contribute to healthy digestion.

Shallots or red onions

Both shallots and red onions add delicious flavor to the salad but also provide health benefits. This vegetable is a great source of antioxidants and contains flavonoids that have anti-inflammatory properties. In addition, shallots and red onions contain compounds that help regulate blood sugar levels and may reduce the risk of developing certain chronic diseases.

Garlic has been used medicinally for centuries due to its potential immune-boosting properties. It also contains sulfur compounds that may help lower blood pressure and reduce the risk of heart disease.

White wine vinegar and Dijon mustard

Extra virgin olive oil

Extra virgin olive oil is a staple of Mediterranean cuisine and is known for its health benefits. It is an excellent source of monounsaturated fats, which are known to support heart health by lowering bad cholesterol levels. Olive oil also contains antioxidants and anti-inflammatory compounds that may help protect against chronic diseases.

Basil or flat-leaf parsley

The addition of basil or flat-leaf parsley not only gives the salad a nice aroma and freshness, but also provides additional nutritional value.
