Ingredients
- 1 teaspoon each of caraway and coriander seeds
- ½ tsp cumin seeds
- 100 ml olive oil, plus a little more
- 4 cloves of garlic, peeled but kept whole
- 1 teaspoon smoked paprika powder
- 500g tomatoes, seeded and chopped
- 3 red chilies, deseeded (if you like it very fiery, you can use more chilies and leave the seeds in)
- 1 tsp rose water (optional)
Preparation steps
- Heat the spice seeds in a dry pan until lightly toasted and aromatic, then lightly crush them with a mortar.
- Heat the oil in a large pan and add garlic, toasted spices, peppers, tomatoes and chilies.
- Cook over low heat, stirring frequently, until the tomato flesh has reduced to a paste and the garlic is tender – this will take about 15 minutes.
- Remove from heat and add the rose water (if using).
- Puree with a hand blender or pulse in a food processor until a coarse paste forms.
- Place a spoonful in a sterilized jar and pour some oil over the surface to completely cover it.
- Will last for several months in the refrigerator if you cover the surface with oil after each use.
