  • 50g butter
  • 1 tbsp olive oil
  • 1 large onion, cut into thin wedges
  • 1 tsp sugar
  • 85g butter
  • 175g self-raising flour
  • 50g Parmesan, finely grated
  • small handful of fresh thyme leaves
  • 1 large free-range egg yolk
  • 25g butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 thick garlic clove, cut into thin slices
  • 5 plum tomatoes, halved lengthwise
  • several sprigs of thyme
  • 300 g cherry tomatoes

Preparation steps

  1. Heat butter and oil in a frying pan until butter is melted.
  2. Fry the onion over medium heat, stirring frequently, until nicely golden brown, about 10 minutes.
  3. Stir in the sugar and let it cook for a few more minutes.
  4. Place the onion and juice in a bowl and set aside.
  5. Preheat the oven to 200°C/gas 6/fan 180°C.
  6. Rub the butter into the flour to form fine crumbs.
  7. Stir in parmesan, thyme and a pinch of salt.
  8. Add egg yolk and 2 tablespoons cold water and mix to form a dough.
  9. Wrap the dough in cling film.
  10. Heat the butter and oil in a 20cm tart tin on the stove until fairly hot.
  11. Stir in sugar and garlic.
  12. Place the plum tomatoes cut side down with a few sprigs of thyme and sizzle for no longer than 1 minute.
  13. Scatter the whole cherry tomatoes over the top and add some more thyme.
  14. Remove from the heat and spread the onions on top.
  15. Season with salt and pepper.
  16. Roll out the dough until it is slightly larger than the top edge of the pan.
  17. Place the dough over the onions, tucking the excess dough into the sides.
  18. Bake on a baking sheet until golden brown, 25 minutes.
  19. Let cool for 5 minutes, place a plate over it and turn the tart out onto it.
  20. Sprinkle with additional thyme and black pepper.
