- 50g butter
- 1 tbsp olive oil
- 1 large onion, cut into thin wedges
- 1 tsp sugar
- 85g butter
- 175g self-raising flour
- 50g Parmesan, finely grated
- small handful of fresh thyme leaves
- 1 large free-range egg yolk
- 25g butter
- 1 tbsp olive oil
- 1 tsp sugar
- 1 thick garlic clove, cut into thin slices
- 5 plum tomatoes, halved lengthwise
- several sprigs of thyme
- 300 g cherry tomatoes
- Heat butter and oil in a frying pan until butter is melted.
- Fry the onion over medium heat, stirring frequently, until nicely golden brown, about 10 minutes.
- Stir in the sugar and let it cook for a few more minutes.
- Place the onion and juice in a bowl and set aside.
- Preheat the oven to 200°C/gas 6/fan 180°C.
- Rub the butter into the flour to form fine crumbs.
- Stir in parmesan, thyme and a pinch of salt.
- Add egg yolk and 2 tablespoons cold water and mix to form a dough.
- Wrap the dough in cling film.
- Heat the butter and oil in a 20cm tart tin on the stove until fairly hot.
- Stir in sugar and garlic.
- Place the plum tomatoes cut side down with a few sprigs of thyme and sizzle for no longer than 1 minute.
- Scatter the whole cherry tomatoes over the top and add some more thyme.
- Remove from the heat and spread the onions on top.
- Season with salt and pepper.
- Roll out the dough until it is slightly larger than the top edge of the pan.
- Place the dough over the onions, tucking the excess dough into the sides.
- Bake on a baking sheet until golden brown, 25 minutes.
- Let cool for 5 minutes, place a plate over it and turn the tart out onto it.
- Sprinkle with additional thyme and black pepper.
