- 8 shallots or button onions
- 8 small new potatoes
- 2 tbsp tomato paste
- 2 tbsp light soy sauce
- 1 tbsp sunflower oil
- 1 tbsp clear honey
- 1 tbsp whole grain mustard
- 300 g firm smoked tofu, diced
- 1 zucchini, peeled and sliced
- 1 red pepper, deseeded and diced
Goes perfectly with some white or brown rice.
1. Place the shallots or onions in a bowl, cover with boiling water and let sit for 5 minutes.
2. Cook the potatoes in a pot of boiling water for 7 minutes until tender.
3. Drain and pat dry.
4. Place tomato puree, soy sauce, oil, honey, mustard and spices in a bowl and mix well.
5. Toss the tofu in the marinade.
6. Let rest for at least 10 minutes.
7. Heat the grill.
8. Drain and peel the shallots or onions, then cook in boiling water for 3 minutes.
9. Drain well.
10. Thread the tofu, shallots, potatoes, zucchini and peppers onto 8 x 20 cm skewers.
11. Grill for 10 minutes, turning frequently and brushing with remaining marinade before serving.
