  • 175g plain flour
  • 50g ground rice
  • 85g golden powdered sugar
  • 140 g cold butter, diced
  • 1 tablespoon milk
  • 25g pumpkin seeds, plus a few more
  • 250g mixed nuts (I used pistachios, macadamias and hazelnuts)
  • 300g caramel (I used cloves)
  • 3 tbsp flour

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Line a square, shallow baking tin with a diameter of 21 or 22 cm with baking paper.
  3. Put the flour, ground rice and sugar in a bowl with the butter and stir until fine crumbs form.
  4. Stir in the milk with a cutlery knife.
  5. Pour the mixture into the mold and press down evenly.
  6. Bake until golden brown, 15-20 minutes.
  7. Remove the tin from the oven and reduce the temperature to 180°C/160°C fan/gas mark 4.
  8. Mix seeds, nuts, caramel and flour.
  9. Spread the mixture evenly over the floor.
  10. Sprinkle additional seeds on top.
  11. Bake for another 8-10 minutes.
  12. Let the squares cool in the tin.
  13. Cut into squares.
