Ingredients

  • 950g apples, peeled, quartered, cored and sliced
  • Squeeze well lemon juice
  • some powdered sugar to taste
  • 100g powdered sugar
  • 250g pack of butter, diced
  • 100g ground rice
  • 200g plain flour
  • 397g can of condensed milk
  • 85g butter
  • 100g light muscovado sugar
  • a few pinches of sea salt
  • 25g cornflakes
  • 100g pecans, very coarsely chopped
  • 100 g roasted whole almonds

Preparation steps

  1. Put the apples in a pot with the lemon juice and 4 tablespoons of water.
  2. Cook gently, partially covered, until tender, 10-15 minutes.
  3. Taste it and add a little sugar if needed – but you’ll want it a little spicier to balance out the sweetness of the topping.
  4. Let cool down.
  5. For the base, puree everything in a food processor.
  6. If you don’t have any, rub the butter into the flour to form crumbs, then stir in the sugar and ground rice.
  7. Line the bottom of an 18 x 28 cm baking pan with baking paper and press the dough into the bottom.
  8. Preheat the oven to 180°C/160°C fan/gas 4.
  9. Bake the base until golden brown, 20-25 minutes.
  10. Spread the cooled apples on the base.
  11. For the topping, put condensed milk, butter and sugar in a saucepan.
  12. Heat to melt the sugar and butter, then reduce the heat and let it bubble until a pale caramel color, about 10 minutes.
  13. Stir in salt, cornflakes and nuts.
  14. Pour over the apples and gently spread until covered.
  15. Return to the oven for another 15-22 minutes until the topping is golden brown and crispy.
  16. Allow to cool in the tin and then cut into squares.
  17. Store in an airtight container for 1-2 days.
