  • 3 red dessert apples
  • Juice ½ lemon
  • 4 tbsp golden powdered sugar
  • 397g canned caramel (we used clove)
  • 6 brioche finger rolls, sliced
  • 3 eggs
  • 400 ml whole milk
  • 200 ml cream
  • 1 tsp vanilla extract
  • Ice cream for serving (optional)

  1. Core the apples and then cut into rings about the thickness of a 50p piece.
  2. Mix the apple rings with lemon juice and 2 tablespoons sugar.
  3. Spread about 2/3 of the caramel in the bottom of a large baking dish.
  4. Layer the brioche and apple rings in overlapping lines in the mold.
  5. Add a spoonful of the remaining caramel here and there, leaving apple pieces sticking out.
  6. In a jug, whisk together eggs, milk, cream, vanilla extract and 1 tablespoon sugar.
  7. Pour the mixture over the brioche and apples, making sure everything is well coated, then wrap in cling film.
  8. Let rest in the refrigerator for at least 30 minutes or overnight.
  9. Preheat the oven to 170°C/150°C fan/gas 3.
  10. Uncover the pudding and sprinkle with the remaining 1 tablespoon sugar.
  11. Bake for 45-50 minutes until the surface is golden brown and the cream has set.
  12. The caramel should bubble around the edges and the pudding should rise.
  13. Serve with vanilla ice cream if desired.
