- 1 tbsp Membrillo (quince paste)
- 2 thick slices of sourdough or good white bread
- 4-5 thin slices of chorizo
- 50g mature cheddar, grated (or other strong, hard or melty cheese left over from the Christmas cheeseboard)
- 1 tbsp mayonnaise
- 3 large sage leaves
- 1 tbsp olive oil or rapeseed oil
- Heat a large frying pan.
- Spread the membrillo paste on a slice of bread (you may need to mash it first with 1 teaspoon of water if it is very thick).
- Top with chorizo and cheese.
- Top with the other slice of bread.
- Spread the outside of both pieces of bread with mayonnaise.
- Press the sage leaves.
- Heat the oil in the pan.
- Bake the toast for 2-3 minutes on each side, occasionally smashing it with a slice of fish, until the bread is crispy and golden brown and the cheese has melted.
- Halve to serve.
