- 200g lamb kidneys, halved
- 1 tbsp rapeseed oil

- 1 tsp English mustard powder
- 2 tbsp flour
- 1 large carrot, chopped
- 4 flat mushrooms, quartered or halved if small
- 3 tbsp chopped parsley
- 140g flour, plus some flour for dusting
- 1 tsp thyme leaves (optional)
- 25g very cold (or frozen) butter
- 4 tablespoons Greek yogurt with 2% fat
- 2 tbsp extra virgin olive oil
- Cut out the thin tubes from the kidneys and discard them.
- Rinse the kidneys in cold water until the water runs clear, then cut them into small pieces.
- Heat the oil in a large pot or deep frying pan.

- Grate in the cold or frozen butter, make a well in the middle and then add the yoghurt, olive oil, a pinch of salt and a good grind of black pepper.
- Using a round bladed knife, mix with 2 teaspoons of cold water and then gently knead into a dough with your hands.
- Remove from the bowl and knead briefly until a smooth mixture is formed.
- Roll out the dough on a lightly floured surface so that it is slightly larger than the top of the cake pan.
- Place the dough over the meat and trim the edges with scissors so that it extends slightly over the edge of the pan.
- Make two small slits in the middle.
- Fold the edges, then roll out the trimmings and cut out 6 diamond-shaped leaves.
- Moisten one side and place it on the dough lid.
- Place the pan on a baking sheet, then bake in the oven for about 25 minutes, until the pastry is golden brown.
