Ingredients

  • 200g lamb kidneys, halved
  • 1 tbsp rapeseed oil
  • 2 medium onions, chopped
  • 2 bay leaves
  • 4 sprigs of thyme
  • 600g lean braised steaks, cut into pieces
  • 100 ml red wine
  • 2 tsp tomato paste
  • 1 tsp English mustard powder
  • 2 tbsp flour
  • 1 large carrot, chopped
  • 4 flat mushrooms, quartered or halved if small
  • 3 tbsp chopped parsley
  • 140g flour, plus some flour for dusting
  • 1 tsp thyme leaves (optional)
  • 25g very cold (or frozen) butter
  • 4 tablespoons Greek yogurt with 2% fat
  • 2 tbsp extra virgin olive oil

Preparation steps

  1. Cut out the thin tubes from the kidneys and discard them.
  2. Rinse the kidneys in cold water until the water runs clear, then cut them into small pieces.
  3. Heat the oil in a large pot or deep frying pan.
  4. Add onions, bay leaves and thyme sprigs and cook over medium heat until onions are golden brown, 8-10 minutes, stirring frequently.
  5. Put the kettle on.
  6. Add the steak and kidney to the pan and fry briefly until it loses its pink color.
  7. Increase the heat, pour in the wine, stir to deglaze the bottom of the pan, then cook over high heat until reduced and absorbed by the meat, 2-3 minutes.
  8. Stir in tomato puree and mustard powder.
  9. Sift the flour while stirring and then stir for a few minutes.
  10. Pour in 400ml boiling water and continue stirring until the mixture starts to boil and thickens.
  11. Add the carrot and the two mushrooms, reduce the heat, put a lid on and then simmer gently for about 1 hour, stirring occasionally.
  12. Remove the lid and simmer for another 25-30 minutes, until the meat is very tender and the sauce has thickened slightly.
  13. Remove from heat and remove the bay leaves and thyme sprigs.
  14. Stir in the parsley, season to taste, then place in a cake or ovenproof dish (22-23 cm diameter, 6 cm deep, 1.7 liter capacity or similar) and let cool slightly.
  15. Preheat oven to 200°C/180°C fan/gas 6.
  16. While the meat is cooling, prepare the dough.
  17. Place the flour and thyme, if using, in a bowl.
  18. Grate in the cold or frozen butter, make a well in the middle and then add the yoghurt, olive oil, a pinch of salt and a good grind of black pepper.
  19. Using a round bladed knife, mix with 2 teaspoons of cold water and then gently knead into a dough with your hands.
  20. Remove from the bowl and knead briefly until a smooth mixture is formed.
  21. Roll out the dough on a lightly floured surface so that it is slightly larger than the top of the cake pan.
  22. Place the dough over the meat and trim the edges with scissors so that it extends slightly over the edge of the pan.
  23. Make two small slits in the middle.
  24. Fold the edges, then roll out the trimmings and cut out 6 diamond-shaped leaves.
  25. Moisten one side and place it on the dough lid.
  26. Place the pan on a baking sheet, then bake in the oven for about 25 minutes, until the pastry is golden brown.
