Ingredients

  • 500g minced turkey meat
  • 85g fresh breadcrumbs
  • 3 tbsp Thai red curry paste (2 tbsp if using authentic spicy Thai curry paste).
  • ½ bunch of spring onions finely chopped
  • 1 egg, beaten
  • 1 tbsp sunflower oil
  • Mango cucumber mayonnaise
  • Spicy mango salsa
  • 4 ciabatta rolls, divided
  • a handful of baby gem lettuce leaves
  • ½ cucumber, peeled and sliced
  • 4 ripe tomatoes, sliced

Preparation steps

  1. Place the ground beef, breadcrumbs, curry paste, scallions and egg in a large bowl.
  2. Season lightly.
  3. Mix well with your hands to combine.
  4. Divide into 4 parts and form into burgers.
  5. Chill for 20 minutes.
  6. In the meantime, prepare the salsa and mayonnaise.
  7. Brush the burgers with oil.
  8. Grill for 7 minutes on each side until firm, golden brown and cooked through.
  9. Alternatively, you can also cook on the grill.
  10. Once the rolls are ready, toast them under the broiler, cut side up.
  11. To serve, top the buns with a turkey burger.
  12. Add lettuce, cucumber, tomato slices and a spoonful of mayo or salsa.
  13. Put the lids on.
