- 4 tbsp green Thai curry paste
- 3 tbsp smooth peanut butter
- small packet of coriander, stems finely chopped, leaves picked off
- Thumb-sized piece of ginger, peeled and cut into fine sticks
- 4 kaffir lime leaves, finely chopped
- 2 x 400 ml cans of light coconut milk
- 850 ml chicken stock (use fresh stock if possible)
- 3 tbsp soy sauce
- Juice 2 limes
- 2 tbsp fish sauce
- 4 small heads of pak choy, halved or quartered through the stem
- 300g pack of raw, peeled king prawns
- 300g cooked rice noodles
- 1 red chili, sliced (deseeded if you don’t like it too spicy)
