Ingredients

  • 2 tbsp green Thai curry paste
  • 250g beef steak (we used rump steak)
  • 2 tsp vegetable oil
  • 160 ml can of coconut cream
  • 1 tbsp soft brown sugar
  • 1 red chili pepper, thinly sliced
  • Zest of 1 lime, juice of ½
  • 200g pack of green beans
  • 300g pack of cooked jasmine rice or 100g rice, cooked and drained
  • ½ small pack of coriander, leaves picked
  • 2 tablespoons crispy onions from a pot (we used Danfood Onion Salad Crispies)

Preparation steps

  1. Rub 1 tablespoon curry paste over the steak.
  2. Heat the oil in a frying pan and bring a small pot of water to the boil.
  3. Cook the steak for 2 minutes on each side for medium rare or to your taste.
  4. Place the steak on a plate and cover with foil to keep warm.
  5. Add the remaining curry paste, coconut cream, sugar, chili, lime zest and juice to the pan.
  6. Let the mixture bubble until slightly thickened.
  7. Meanwhile, add the beans to the boiling water and cook for 3 minutes, then drain.
  8. Pour the remaining steak juices into the sauce.
  9. Cut the steak into strips.
  10. If the rice is not yet hot, reheat it.
  11. Divide the hot rice between two bowls.
  12. Top the rice with beans, steak and coconut dressing.
  13. Garnish with coriander and crispy onions.

  5. In the same pan, add the coconut cream, brown sugar, sliced ​​red chilies, lime zest and lime juice. Cook until the sauce thickens slightly.
  6. Meanwhile, steam or boil the green beans until tender-crisp.
  7. Cut the beef into thin strips.
  8. Divide the cooked jasmine rice between plates and top with sliced ​​beef, steamed green beans and coriander leaves.
  9. Drizzle the coconut dressing over the top and sprinkle with crispy onions.
