  • 450g sausage meat
  • 1 heaped tbsp chipotle paste
  • 1 green chili pepper, finely chopped
  • 4 spring onions, coarsely chopped
  • small packet of coriander, roughly chopped
  • finely grated zest and juice of 1 lime
  • 400g can of kidney beans, drained and rinsed
  • 375g package of ready-rolled puff pastry
  • 1 egg, beaten
  • a pinch of dried oregano (optional)
  • Ketchup and green salad for serving (optional)

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas mark 6 and place a baking tray in to warm.
  2. Mix the sausage meat with the chipotle paste, chili, onion, cilantro, lime zest and juice, and some seasoning before pressing in the kidney beans.
  3. Roll out the dough on a sheet of baking paper, with the longest side facing you, and spread the sausage mixture into the center of the dough – it should form a round mound about 10cm wide.
  4. Measure 1cm from the filling, then cut the sides of the dough slightly diagonally into 1.5cm thick strips.
  5. Lift these up and over the sausage filling so they meet at the top. Use the last pieces to wrap the ends.
  6. Brush with the egg and sprinkle with oregano if necessary.
  7. Using the baking paper, carefully lift the sausage plait onto the hot baking tray.
  8. Bake for 40 minutes until golden brown and cooked through.
  9. Serve with ketchup and green salad if desired.
