Ingredients

  • 215g package chorizo ​​for cooking, skin removed

Preparation steps

  1. Heat a large, wide pan.
  2. Add the chorizo ​​and fry with the spatula for 5 minutes until golden brown and dripping with oil.
  3. If there is more than 2 tablespoons of oil in the pan, spoon out the excess.
  4. Add onion and thyme and simmer for 5 minutes.
  5. Stir in the paprika, cook for 1 minute, then add the wine, scraping up any bits from the bottom of the pan.
  6. Add the tomatoes, cover with a lid and simmer for 10 minutes until the tomatoes have wilted.
  7. Do not season with salt as the sausages are salty enough for now.
  8. Add the squid, making sure it sits well in the juice, then cover again and simmer for 1 hour.
  9. Add the potatoes, then cook for another 30 minutes, adding a splash of water if they look dry.
  10. Mix garlic, mayonnaise and lemon juice and set aside.
  11. Sprinkle with a little paprika if desired.
  12. Test the squid; It should be tender enough to cut through with a spoon. Then check whether the potatoes are cooked.
  13. Stir in the parsley and serve with a dollop of aioli, a squeeze of lemon and some crusty bread.
