Ingredients
- 320g ready-rolled puff pastry
- 50g unsalted butter
- 3 large red onions, cut into wedges, leaving most of the root intact
- 2 tbsp balsamic vinegar
- 30 g light brown soft sugar
- a small handful of flat-leaf parsley, roughly chopped
- small handful of mint, leaves picked and roughly chopped
- small handful of chives, finely chopped
- 2 tbsp capers, coarsely chopped
- 1 lemon, juiced
- 1 tbsp red wine vinegar
- 80 ml extra virgin olive oil
Preparation steps
- Preheat the oven to 200°C/180°C fan/gas 4.
- Unravel the sheet of puff pastry and remove the parchment.
- Cut a 25cm circle from the dough, using an ovenproof frying pan as a template.
- Place the dough circle on a tray and refrigerate until needed.
- Melt butter in the same skillet over medium heat.
- Once foaming, arrange the onions in concentric circles in the pan, close tightly and reduce the heat to low.
- Season with a pinch of salt and cook for 10-15 minutes until the onions begin to caramelize.
- Keep an eye on them so they don’t burn.
- Add vinegar and sugar and reduce heat to medium-low.
- Cook for another 5-8 minutes, until a sticky glaze has formed on the bottom of the pan and the onions are deeply caramelized.
- Remove the dough from the refrigerator, place it on top of the onions and fold the edges tightly.
- Prick all over with a fork.
- Place in the oven and bake for 20-25 minutes, or until the dough is golden brown and risen.
- In the meantime, prepare the salsa verde.
- Combine herbs and capers in a large bowl.
- Add lemon juice, vinegar and olive oil.
- Season with salt, pepper and a pinch of sugar.
- Remove the Tarte Tatin from the oven and let it cool for 5 minutes.
- Place a large plate over the pan and turn the Tarte Tatin onto it. Leave the pan in place (you will need to wear oven gloves as the pan is still hot).
- Leave the pan upside down on the plate for a few more minutes (this will allow the tart to naturally separate from the bottom).
- Remove the pan and spoon the salsa verde over the top before cutting into wedges to serve.
