Ingredients

  • 200 ml carton of crème fraîche
  • 2 tbsp powdered sugar
  • 1 tbsp brandy or Calvados
  • 50g butter

  • 6 medium Cox apples or Egremont Russet apples, peeled, quartered and cored
  • Pack of fresh, ready-rolled puff pastry

Preparation steps

  1. Preheat the oven to 220°C/gas 7/fan 200°C.
  2. Melt the butter in a 20cm tart tin tin over medium heat on the stove.

  6. Remove from heat.

  12. For the brandy cream, mix crème fraîche with powdered sugar and brandy or Calvados.
  13. When the tart is ready, let it rest in the tin for about five minutes before running the blade of a knife around the edge to loosen any stuck dough.
  14. Invert a plate over the top and turn out the tart, leaving the remaining juice in the pan.
  15. Serve with the brandy cream.
